B & K’s Nom Nom Salad!

This salad is a sure-fire way to convert people who don’t eat “rabbit food” as K’s Hubby likes to call it. We first made this salad last summer and it has become a staple dish at all of our family gatherings. Everyone loves it! It is not one of our original recipes but we wanted to share it anyway because it’s that damn good! As B says… “This shiiiit is Fiyah!”

First off… get a giant bowl and some salad tossin’ tongs! You’ll also need an empty jar with a lid (to shake up the home-made dressing) Pull out a skillet and spatula as well. (The spatula can be used to spank the ass of whomever disturbs your chef-like state.)

Other stuff you’ll need…

1/4 cup of slivered almonds

1 bag spinach leaves (9 ounces)

3/4 cup thinly sliced red onion (don’t cut your finger tryin’ too hard to chef it up! Bloody onions aren’t very tasty!)

1/3 cup pomegranate juice (K substitutes with Marzetti’s Simply Dressed Pomegranate Vinaigrette)

3 tablespoons sugar

3 tablespoons apple cider vinegar

2 tablespoons vegetable oil

2 tablespoons dark sesame oil

1/4 teaspoon red pepper flakes

1/8 teaspoon salt

2 cups quartered strawberries (rinse first,  they’ll taste much better!)

4 ounces of crumbled goat cheese (shredded parmesan will do if you can’t find goat cheese but we’d like to say it’s not as good)

Sounding good so far???  Just wait until you take that first bite and a party starts in your mouth!

Now you’ll want to get some butter (about 1/2 teaspoon) and throw it in the skillet on medium heat, next you’ll dump in your slivered almonds. You’ll toss them around for a few minutes until they’ve browned just a tish. Remove to a small bowl and set aside to cool.

Here is where you’ll need your giant bowl. Dump in the spinach leaves and thinly sliced red onion. Toss it, Leave it, for a few a minutes… unless you have 4 hands. Haha

Now grab your jar and mix up the pomegranate juice, sugar, veg oil, sesame oil, red pepper flakes, and salt. Place lid on jar and shake it vigorously. Shake it like Polaroid picture… shake it… shake it… K thinks it helps to dance around the room pretending ya know how to do the salsa as well. It should be well blended before drizzled over salad.

Once dressing is blended, pour over spinach and onion, toss to coat. Now you add the strawberries and toss again… I know a whole lotta salad tossin’ goin’ on! B is a pro at tossin’ some salad! Not that way you perverts!! hahaha

Top it off with your toasted almond slivers and goat cheese.

Viola! You have made yourself B & K’s Nom Nom Salad!! (4 big servings)

      Thanks Kathleen! We do have fun cooking. We are goof balls. You should see us cook, that would have ya crackin up! We seriously need a show bhahaha.

    This sounds great, but I’d probably add diced grilled chicken and use chopped walnuts instead of almonds. I love salads, so many ways to make them.
